- 200g cherry tomatoes
- 200g mozzarella
- 30g fresh basil
- 30ml olive oil
- 1 egg
- Avocado puree
Step by step
1. Combine cherry tomatoes, mozzarella, basil, salt, pepper and olive oil.
2. Fry egg until white is cooked.
3. Spread avocado on top of the toast.
4. Top with a fried egg.
5. Top with 1/4 of the caprese mixture.
