Lettuce Tacos

Tastes like tacos but is vegetarian: Lettuce Tacos

If you're in the mood for something light and healthy, why not try making lettuce tacos? This Mexican-inspired dish is perfect for a quick and easy meal. Simply use large lettuce leaves in place of tortillas, and fill them with your favorite taco toppings. Whether you're a fan of ground beef, shredded chicken, or veggies, you're sure to enjoy this tasty twist on a classic. Plus, lettuce tacos are a great way to get your daily dose of greens!

23 MIN.

Ingredients for 2

  • 4 eggs

  • 1 tbsp yellow mustard

  • 1 tbsp cottage cheese

  • 4 pieces cherry tomatoes

  • 2 tbsp scallions, chopped

  • 1 tbsp dill, chopped

  • 1 red chili pepper sliced round.

  • 1 tsp salt

  • 1 tsp white pepper

  • 4 leaves green leaf lettuce

Step by step

1. Place eggs in a saucepan, pour cold water, and boil them. Turn off the heat, cover the lid and rest for 10 minutes.

2. Cut the tomatoes into four pieces.

3. Wash the lettuce leaves and let them dry.

4. Take eggs and peel the shells—separate the white and yellow parts in two different bowls.

5. To the yellow part, add mustard and mash it. To the white part, cut it into chunks and add cottage cheese; mix well. Put two mixtures together in a bowl. Add scallion, salt and pepper.

6. Place the mixture inside the lettuce leaves: place tomatoes and chili pepper on top. Serve with sprinkled dill. Enjoy!
