Ingredients
- 100 g black rice
- 2 chicken breasts
- 1 onion, chopped
- 1 carrot, grated
- ¼ cup scallion, chopped
- 2 L water
- 2 cups warm water
- 3 bay leaves
- 3 clove garlic
- 1 thumb size ginger
- ½ cup leek
- 1 tbsp salt
- 1 tbsp pepper
- 1 tbsp sesame seeds
Step by Step:
1. Place chicken breast in a large pot, add 2 L water on top. Add 3 bay leaves, ginger,
garlic, leek, salt and pepper. Bring it to a boil, reduce the heat, cover lid and simmer
for 30 minutes.
2. Soak black rice in warm water for 30 minutes.
3. After 30 minutes turn off the heat, take out chicken breast in a cutting board and
strain the juice. Shred the chicken with two forks. Set aside.
4. Take black rice in the pot top of chicken stock, add onion, carrot and scallion on top.
Simmer for 40 minutes with lid. Stir every 10 minutes. Add salt and pepper.
5. Portion porridge to two serving bowl, serve with shred chicken, sesame seeds and
chopped scallions. Enjoy!
