Ingredients for 2
● 1 chicken breast
● 1 sweet potato, cubes
● 1 red onion, half-moon shape
● 1 avocado, sliced
● 2 cups baby lettuce
● ½ cup almond, sliced
● ¼ cup raisins
● 1 tbsp olive oil
● 400 ml water
● 1 tbsp salt
For the dressing;
● ½ lemon juice
● 1 tbsp olive oil
● 1 tsp salt
● 1 tsp pepper
Step by step
1. Preheat the oven to 200°C.
2. On top of a baking sheet, mix sweet potatoes and onion, add salt and drizzle olive

3. Bring it to a boil in 400 ml water, add salt and boil chicken breast for 15 minutes. Let
cool down, then shred with two forks in a bowl; add potatoes and onions to the bowl, and
mix it gently.
4. Toast the almonds in a pan without any oil.
5. Place baby lettuce on two serving plates—place chicken mix on top of lettuce, and
place avocado, almond and raisins on top.
