Salad with high nutritional value: Teff Salad with Yoghurt

Ingredients:
● 100 g whole grain teff
● 120 g water
● 1 tsp salt
● 1 carrot, shredded
● 1 zucchini, shredded
● ½ cup raw walnuts
● 2 tbsp olive oil
● 1 tsp salt
● 1 tsp pepper
● 1 tsp cumin
For the dressing;
● 1 cup yoghurt
● 1 clove garlic
● 1 tsp salt
● 1 tsp white pepper
Step by step
1. Bring to a boil 120 ml water with salt in a wide saucepan; add teff and stir.
Reduce the heat and simmer for 10 minutes.
2. After 10 minutes, fluff up the teff with a fork and rest for 10 minutes, covered.
3. Take carrot and zucchini in a kitchen towel and squeeze extra water as much
as possible.
4. Heat the olive oil in a pan, add carrot, zucchini, and walnuts, and sauté for 5
minutes until vegetables become tender. Turn off the heat and add spices.
5. Place teff and vegetables on the bottom of the plate. Pour some dressing on
top.
6. Serve with extra walnuts on the top. Enjoy!
