Ingredients for 2
100 g quinoa
50 g green lentils
6 quail eggs
1 carrot, grated
¼ cup goat cheese
550 ml water
1 tbsp salt
Fresh dill
6 pieces green olive
For the dressing;
1 tbsp fresh lemon juice
1 tbsp fresh orange juice
1 tbsp green olives, minced
1 tbsp olive oil
1 tsp salt
Step by step
1. Rinse quinoa and green lentils nicely. Took them in a large saucepan, pour 350 ml water, add 1 tbsp salt, and bring it to a boil. Lower the heat, cover the lid and simmer for 18 minutes. Fluff up with a fork.
2. In a separate saucepan, boil 200 ml water and add quail eggs; cook for 4 minutes, and drain it immediately. Wash with cold water. Cut eggs into 4 pieces.
3. In a bowl, combine all dressing ingredients, and whisk well.
4. Portion cooked quinoa-lentil to two serving plates.
5. Place quail eggs, dill and green olives on top.
6. Sprinkle goat cheese.
7. Whisk dressing before drizzling on top and serve it. Enjoy!
