Ingredients:
- 2 whole zucchinis
- 200 g turkey breast
- 200 g spinach, ready to use
- 1 onion, chopped
- 1 yellow bell pepper, chopped
- 1 clove garlic, mined
- ½ cup black rice, cooked
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- Ice
For the Topping:
- ½ cup bread crumps
- ½ cup parmesan
- ½ cup crashed almond
- 1 tsp white pepper
- 1 tsp paprika
- 1 tsp garlic powder
Step by Step:
Preheat oven to 200°C. Prepare tray with baking sheet.
Take zucchinis and cut them lengthwise, leave the stems. Take zucchinis middle part for later and put zucchinis in ice water.
Take turkey breast to food processor and ground it with middle part of zucchinis.
In a pan heat the oil, sauté onion, yellow pepper and garlic for 2 minutes. Add spinach cook until all water goes. Add ground meat and sauté for 4 minutes. Lastly add cooked rice, salt and pepper, stir well.
In a bowl mix all topping Ingredients.
On baking tray place zucchinis, stuffed middle part with meat mixture. Cover the top with topping mixture.
Bake about 15 minutes. Until top became golden brown.
