Ingredients:
- 250 ml coconut milk
- 2 sheets of gelatine
- 15 g quinoa, cooked
- 5 g raisins
- 5 g dried cranberries
- 5 g pumpkin seeds
- 5 g pistachios
For the topping:
- Dried goji berries
- Dried blueberries
- Shredded coconut
- 1 tsp honey
Step by Step:
1. Bloom the gelatine in cold water.
2. Toast the raisins and nuts.
3. Heat gelatine with coconut milk in a saucepan and add all other ingredients for 5
minutes. Do not boil it.
4. Pour the mixture into cups and rest in the fridge for at least 20 minutes.
5. Serve with drizzle honey, sprinkle goji berries, blueberries and coconut. Enjoy!
