Ingredients
● 130 g creamy peanut butter
● 75 coconut oil, melted
● 6 tbsp maple syrup
● 1 egg, or flax egg if vegan!
● 2 tsp vanilla extract
● 45 g hazelnut meal, nut powder
● ½ tsp baking soda
● ½ tsp salt
● 1 ½ cups dark chocolate chips
Step by step
1. In a mayonnaise pot or large mixing bowl combine the peanut butter, melted
coconut oil, maple syrup, egg, and vanilla extract. Whisk until completely
homogenous, about 1 minute. Add the hazelnut meal (nut powder), baking soda,
and salt and stir until just combined. Fold in the chocolate chips.
2. Place the cookie dough in the fridge for at least 2 hours.
3. Then preheat the oven to185C° and line a baking sheet with parchment paper.
4. With the help of a spoon or with your hand, lay the cookie dough on the tray in a
round shape.
5. Then bake cookies for 15 minutes until the edges are golden brown and the
centers have puffed up.
6. Take it out of the oven, let it cool down, then enjoy!
