Ingredients:
- 100 g chickpeas, ready to use
- 100 g thin bulghur
- 1 cucumber, seeds out, medium dice
- 1 tomato, seeds out, medium dice
- ½ cup parsley, chopped
- ¼ cup scallion, chopped
- 2 cups boiling water
For the Dressing:
- 2 tbsp olive oil
- 5 leaves fresh mint
- ¼ cup fresh dill
- 2 tbsp tahini
- 1 lime juice
- 2 lime slice
- 1 tbsp salt
Step by Step:
1. In a large bowl soak bulghur with 2 cups boiling water for 15 minutes. Drain it if
needed.
2. Blend all dressing ingredients in a blender until smooth texture.
3. In a large bowl combine bulghur with chickpeas, cucumber, tomato, parsley and
scallion. Toss it well.
4. Portion the salad to two serving plate drizzle dressing on top with lime slice and
serve it. Enjoy!
