Ingredients:
- 1 haddock fillet
- 2 tbsp soft butter
- 1 tbsp fresh thyme
- 1 tbsp fresh rosemary
- 1 tbsp fresh dill
- 2 tbsp lemon juice
- 1 cup broccoli
- 1 tsp salt
- 1 tsp pepper
- 2 lemon slices
- For the Amarant:
- 1 cup Amarant
- 3 cup fish stock or water
- 1 onion, chopped
- 1 jalapeno pepper, chopped
- ¼ cup dried tomatoes
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp white pepper
Step by Step:
1. Preheat oven to 180°C. Place baking dish in oven and preheat that too. Beko ovens

2. In a thick bottom pot heat olive oil and sauté onion, pepper and dried tomatoes. Add
3 cup fish stock, salt and pepper bring it to a boil. After boiling add Amarant and give
it a stir. Low the heat, close the lid and simmer for 20 minutes. Fluff up with fork
after cooking.
3. Mix soft butter, lemon juice, salt and pepper. Take baking dish from oven, place
bluefish fillet on center. Add broccolis around the fillet. Pour butter-lemon juice
mixture on them and place all herbs irregular. Bake for 20 minutes.
4. Portion Amarant pilaf, broccoli, and fish to two plates and serve it. Enjoy!
