Ingredients
● 100 g quinoa
● 10 shrimps
● 1 cucumber, seeds removed and chopped
● 1 carrot, chopped
● ¼ cup scallions, chopped
● 1 tbsp olive oil
● 1 tsp salt
● 1 tsp pepper
● ½ tsp paprika
● 200 ml water
For the dressing;
● 1 tbsp peanut butter
● 2 cm piece lemon grass
● 2 cm piece ginger
● 2 tbsp olive oil
● 1 tbsp lime juice
● 1 tbsp water
● 1 tsp salt
Step by step:
1. Combine quinoa and water in a pot, boil it, and reduce the heat. Cover with a lid and
simmer for 15 minutes. After 15 minutes, rest for 10 minutes and fluff up with a fork.
2. After the quinoa cools down, take it in a large bowl. Add vegetables to it.
3. Blend all dressing ingredients in a blender until smooth texture. Set aside.
4. Heat 1 tbsp olive oil in a pan, and cook shrimp on both sides for 3 minutes. Add salt,
pepper and paprika, and turn off the heat.
5. Separate the quinoa salad into two serving plates. Drizzle dressing generously on top.
Place shrimps, sprinkle chopped scallions and serve it. Enjoy!
