Ingredients:

  • 100 g green lentil
  • 300 ml water
  • 2 tbsp chia seed
  • 100 g mixed roasted vegetables
  • 100 g mixed fresh greens
  • 1 avocado, sliced
  • 1 tomato, sliced half-moon
  • 1 cucumber, sliced

 

For the Topping:

  • 50 g goat cheese
  • 2 tbsp pumpkin seeds
  • Fresh dill

Step by Step:

 

1. Rinse the green lentil, take to a saucepan, and add 300 ml water. Bring it to a boil,

reduce the heat, cover the lid and simmer for 20 minutes. Drain if needed. After

drain sprinkle chia seeds and stir.

2. In two large bowl places greens first. Top of them place roasted and raw vegetables.

Lastly place green lentils on top.

3. Serve with pumpkin seeds, goat cheese and fresh dill. Enjoy!
