Healthy Vegetable Ramen

Ingredients:
- 1 zucchini
- 1 carrot
- 300 ml vegetable stock
- ½ cup scallion, chopped
- 2 eggs
- 1 tsp sesame seeds
- 4 ice cubes
- 1 tbsp soy sauce
Step by Step:
1. Cut zucchini to two pieces longitudinal, take-out zucchini’s seeds part with a spoon.
Cut long strips from zucchini and carrot. Rest them in ice water for 10 minutes.
2. In a saucepan, simmer eggs for 6 minutes. Then run it under cold water and peel it.
Cut in a half, set aside.
3. Heat the vegetable stock in a pan.
4. In a serving bowl. Place vegetable noodles first. Pour hot vegetable stock on top.
Place half eggs on the middle.
5. Sprinkle sesame seeds chopped scallions and drizzle soy sauce on top. Serve it hot.
