This dish is a delicious and easy way to get your family to eat together. The chicken is coated in a crispy, nutty coating that is both healthy and delicious. The mashed potatoes are light and fluffy, and the perfect accompaniment to the chicken. The veggies are roasted to perfection and add a lovely sweetness to the dish.

Ingredients:

  • 2 whole chicken breasts
  • 40 ml olive oil
  • 30 g Dijon mustard
  • 30 ml water
  • 1 clove garlic, mashed
  • 1 tsp thyme
  • 80 g chopped walnuts
  • 60 g whole wheat flour
  • 1 tsp salt
  • 1 tsp pepper

 

For Mashed Potatoes:

 

  • 3 potatoes
  • 3 tbsp milk
  • 2 tbsp butter
  • Salt and pepper
  • 500 ml

Step by Step:

1. Take chickens in a cutting board and split horizontally in half.

2. In a bowl mix olive oil, mustard, water, garlic and thyme. Add chicken breasts and

cover with the sauce. Marinade for 4 hours in fridge.

3. In a plate large plate mix chopped walnuts, whole wheat flour, salt and paper.

4. Preheat oven 200°C.

5. After 4 hour take chickens, cover both sides with walnut mixture. Prepare baking

tray with baking sheet. Place chicken pieces on tray, cover with wet baking sheet.

Bake for 15 minutes then open the top of chickens and bake 10 more minutes.

6. Clean potatoes with brush nicely. Take of any part look darker spot. Cut the potatoes

medium chunks. Don’t peel.

7. Boil 500 ml water in a pot. Add potatoes cover lid half and cook for 15 minutes.

8. Drain potatoes add butter, milk, salt and pepper mash everything together.

9. In two serving plate place mash potatoes on one side and the chicken pieces other

side. Serve with fresh greens. Enjoy!
