Ingredients:
- 100 g whole wheat spaghetti
- 50 g beetroot
- 120 g chicken breast
- 1 bay leaf
- 1 onion
- 1 carrot
- ½ celery
- 1 tsp soy sauce
- For the Topping:
- 25 g walnut
- 1 tbsp shredded coconut
Step by Step:
1. Boil the beetroots. Cook the pasta in beetroot water and then puree the beetroots. Finish the
pasta with beetroot puree.
2. Bring it to a boil 200 ml water in a pot. Boil the chicken with mire-poix, bay leaf and soy
sauce for 20 minutes. Pulled chicken with two forks.
3. Then reduce the stock and add the pulled chicken into the reduced stock.
4. Chop the walnuts and set aside.
5. Serve the pasta with pulled chicken, chopped walnut and shredded coconut on top. Enjoy!
