Sea Bass Oat Porridge with Garlic Chips is a unique and delicious dish that combines the comforting texture of oatmeal with the fresh flavor of pan-seared sea bass. The oat porridge is made with steel-cut oats and seasoned with herbs and spices, creating a warm and filling base for the fish.

Ingredients:

  • 2 sea bass fillets
  • 100 g rolled oat
  • 3 cups fish stock
  • 50 g Oyster mushroom
  • 1 teaspoon fish sauce, gluten free one
  • 1 teaspoon white pepper

 

For Garnish:

  • Half head of garlic
  • ¼ cup olive oil
  • ¼ teaspoon salt
  • 1 red chili pepper
  • Purple basil

Step by Step:

 

1. Preheat oven to 180°C on grill option.

2. Take the fillets in a baking tray with baking sheets, add salt and pepper on top and

grilled on the oven 20 minutes.

3. Rinse brown rice and take in a pot. Add 3 cups of fish stock half cover with a lid and

bring it to a boil. Then low to heat let them simmer 15 minutes.

4. Same time cut the oyster mushrooms to dice.

5. After 15 minutes open the lid and stir rice and simmer 15 more minutes. Then stir

again and add the mushrooms, cover the lid simmer 20 minutes.

6. On the other side peel and thinly slice garlics. Heat the olive oil in a saucepan and

add garlics. Fried garlics until they became brown and crisps. Drian garlics with fine

mesh strainer set in a bowl and season with salt. Save the garlic oil for later.

7. After 20 minutes add fish sauce, white pepper and salt stir well then turn off the

heat.

8. Take the porridge on serving bowls place sea bass fillets on top. Place garlic crisps

on top of fish lastly drizzle garlic oil, sprinkle chopped chili pepper and purple basil

on top and serve hot. Enjoy!
