Ingredients

 

For The Dressing:

  • 1 cup Greek Yogurt
  • 2 cloves garlic minced
  • 4 tablespoons lemon juice freshly squeezed
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh dill optional or parsley

For The Salad:

  • 3 cups cooked chicken cut into small cubes
  • 3 scallions thinly sliced
  • ¼ cup red onion chopped
  • 2 stalks of celery sliced
  • ½ cup cubed apples
  • ½ cup red grapes halved if they are large
  • ⅓ cup sliced almonds preferably roasted

Optional Add-ins:

  • 1 small avocado cubed
  • ½ cup thinly sliced cucumber
  • ¼ cup thinly sliced radishes
  • 3 tablespoons chives with flowers if they are in season

Step by step

 

1. To make the dressing: Whisk together yogurt, garlic, lemon juice, olive oil, salt and pepper in a bowl. Add in the fresh dill, if using. Set it aside.

 

2. To make the salad: Place chicken, scallions, red onion, celery, apples, grapes, and almond into a bowl. If you are adding the

additional toppings feel free to do that now.

 

3. Drizzle it with the dressing. Give it a gentle toss. Taste for seasoning and add in if necessary.

 

4. Serve.
