Ingredients:
· 1 block of tofu, big chunks
· 100 g broccoli, cut into small florets
· 100 g green beans
· 2 pieces scallion, finely chopped
· 200 g tomatoes, cut into small chunks
· 1 carrot, grated
· 2 sticks of celery, sliced
· Half a crispy lettuce shredded
· 2 tablespoon coriander, finely chopped
· Half a red chilli, finely chopped
For the marinade;
· 3 tbsp olive oil
· 2 tablespoon soy sauce
· Sea salt & black pepper
For the dressing;
· 2 tbsp olive oil
· 1 tbsp fresh lemon juice
· Salt pepper to taste
Step by step
1. Place the tofu in a bowl, pour over the marinade and mix together. Make sure all the
tofu pieces are nicely coated. Leave them to sit while you make the salad.
2. Blanch the broccoli florets and green beans for 2 mins, and then drain.
3. Meanwhile, mix the dressing ingredients together and whisk or place them in a
small jar and shake to mix.
4. Heat a frying pan with 1 tbsp olive oil and add the marinated tofu. Cook on
medium/high heat, turning until browned. Remove and set aside.
5. Put all the vegetables and herbs in a large bowl and toss to combine. Top with the
tofu and mix. Pour over the dressing, and toss it.
6. Serve immediately, sprinkled with the remainder of the herbs and a slice of bread.
