- 1 onion
- 250g broccoli
- ½ zucchini
- 250g peas
- 4 quail eggs
Step by step
1. Peel the onion and sauté it with oil.
2. Add the chopped vegetables and the peas to the sauté. Season with salt and pepper.
3. Cover with water and boil for 10 minutes.
4. Puree the soup with the blender. Mix and leave to cool.
5. Cook the quail eggs.
6. Serve the soup cold in a bowl with a fried egg and Parmesan shavings on top.
