- 560g cake flour
2 tsp cream of tartar
1 tsp bicarbonate of soda
½ tsp salt
1 tsp ground cinnamon (optional)
2 free-range eggs
2 tbsp milk
½ tsp vanilla extract
Edible gold or silver shimmer
FOR THE ICING MIX:
260g icing sugar
80ml lemon juice or milk
Preheat the oven to 180°C, then sift the flour, cream of tartar, bicarbonate of soda, salt, and cinnamon together.
Rub the butter into the flour mixture until it starts to feel crumbly, before setting it aside.
In a separate bowl, beat the eggs, sugar, milk, and vanilla extract together.
Now add the buttery flour and mix well before wrapping the dough in the cling wrap and chill for 30 minutes.
Roll out the dough to a thickness of 4mm on a floured surface and press out the stars using a cookie cutter
Place the cookies on a greased baking tray and bake for 8 - 10 minutes, or until golden. Allow to cool while you prepare the icing.
Combine the icing sugar and lemon juice with a whisk in a bowl until smooth. Add the icing to a piping bag to begin icing the cookies.
Place the individual cookies on clean baking paper, place the icing into a piping bag to begin piping the icing onto the cookies. Optional: sprinkle with edible silver or gold shimmer.
Allow the cookies to dry completely before packing them away.
