 Hand Blender Festive Recipe: A Merry Soetkoekie-Mas

INGREDIENTS:

 

  • 560g cake flour
  • 2 tsp cream of tartar

  • 1 tsp bicarbonate of soda

  • ½ tsp salt

  • 1 tsp ground cinnamon (optional)

  • 250g butter

  • 2 free-range eggs

  • 200g sugar

  • 2 tbsp milk

  • ½ tsp vanilla extract

  • Edible gold or silver shimmer

     

    FOR THE ICING MIX:

 

  • 260g icing sugar

  • 80ml lemon juice or milk

     

    COOKING INSTRUCTION:

     

  • Preheat the oven to 180°C, then sift the flour, cream of tartar, bicarbonate of soda, salt, and cinnamon together.  

  • Rub the butter into the flour mixture until it starts to feel crumbly, before setting it aside.   

  • In a separate bowl, beat the eggs, sugar, milk, and vanilla extract together. 

  • Now add the buttery flour and mix well before wrapping the dough in the cling wrap and chill for 30 minutes.  

  • Roll out the dough to a thickness of 4mm on a floured surface and press out the stars using a cookie cutter

  • Place the cookies on a greased baking tray and bake for 8 - 10 minutes, or until golden. Allow to cool while you prepare the icing. 

  • Combine the icing sugar and lemon juice with a whisk in a bowl until smooth. Add the icing to a piping bag to begin icing the cookies.

  • Place the individual cookies on clean baking paper, place the icing into a piping bag to begin piping the icing onto the cookies. Optional: sprinkle with edible silver or gold shimmer.

  • Allow the cookies to dry completely before packing them away.
