Ingredients
● 340 g low-fat tofu
● 70 g whole wheat flour
● 1 tsp baking powder
● 100 g soy milk
● 100 g bean sprouts
● 1/4 cup finely chopped green onions
● 1/2 cup sliced shiitake mushrooms
● 1 tablespoon soy sauce
● 2 tablespoons peeled, grated fresh gingerroot
● 2 tablespoons olive oil
● 2 tablespoons sweet chili sauce
Step by step
1. In food processor or blender, combine tofu, flour and soy milk and process until
smooth.
2. Transfer mixture to medium bowl. Stir in bean sprouts, green onions, shiitake
mushrooms, soy sauce and ginger.
3. Batter should be fairly stiff add more flour if needed.
4. In large nonstick skillet, heat oil over medium heat. Drop batter in skillet by spoon
fuls. Cook until golden brown, turning carefully, 2 to 3 minutes per side.
5. To serve, arrange pancakes on a heated platter and top with sweet chili sauce.
