Imagine that you are busy all day and at that moment you need a break. Take a minute to pause, take a big breath, and go to the kitchen. Cooking will elevate your mood and this recipe will accompany you on your Breaks. Dont get me wrong, it wot take much of your time. You wont even realize how that time has passed. It will be so enjoyable.

Ingredients:

  • 300 ml vegan rice yogurt
  • Half lime juice
  • 50 g flaxseed
  • 50 g quinoa, cooked
  • One green apple
  • One cucumber
  • 15 ml soy sauce
  • 20 ml olive oil
  • 2 tbsp sesame seeds

Step by Step:

 

1. Firstly, soak flax seeds in cold water for 10 minutes.

2. Whisk yogurt and lime juice.

3. Cut the green apple into mirepoix and chop the cucumber into round shapes.

4. Pour soy sauce and sesame seeds on the cucumbers and let it rest for 10 minutes.

5. Mix olive oil, flaxseed and quinoa into yogurt.

6. Place yoghurt mixture on bottom of bowl. Add roundly cut cucumber and sliced

green apple on top. Serve with sesame seeds and little drizzle soy sauce. Enjoy!
