Steamed Salmon with Quinoa Salad

Ingredients:
1. 2 pieces salmon fillets
2. 1 tsp salt
3. 1 tsp pepper
4. 100 g quinoa
5. 300 ml water
6. 1 cucumber
7. 4 cherry tomatoes
8. 1 yellow bell pepper
9. 1 cup purple cabbage, chopped
10. 4 figs
11. 2 pieces scallions, chopped
12. ½ cup dill, chopped
13. Lime slices
For the Sauce:
14. 1 lemon juice
15. 2 tbsp olive oil
16. 1 tbsp balsamic vinegar
17. 1 tsp salt
18. 1 tsp pepper
Step by Step:
1. Rinse quinoa and put in a saucepan, add 300 ml water bring it to a boil, low the heat,
cover the lid and cook for 15 minutes. Then rest for 10 minutes. Open the lid and let
to cool down.
2. Cut tomatoes, bell pepper, cucumber, and figs bite size.
3. Boil 2 cup water in a saucepan, place steamer basket.
4. Take salmon fillets sprinkle salt and pepper every side. Place fillets to the basket,
cover the lid and steamed for 15 minutes.
5. Mix sauce Ingredients in a bowl and set aside.
6. In a large bowl mix quinoa, tomatoes, cucumber, bell pepper, dill, purple cabbage,
scallions then add sauce and toss well.
7. Share out salad in two plates, place figs on plates. Place salmon fillets side. Serve
with lime slices. Enjoy!
