For the dough:
- 1 Cauliflower
- 1 egg
- 2 tablespoons chickpea flour
For the topping:
- Cherry tomatoes
- Pine nuts
- Mashed tomato
Step by step
1.Slice the cauliflower as thin as possible; you can use a grater. Add salt and sauté in a frying pan with a bit of olive oil.
2.Mix the cauliflower with the egg, chickpea flour and oregano to create the dough. Knead until homogeneous.
3.Shape it in a round oven dish and bake for 10 minutes, at 180º C. Remember to preheat the oven.
4.Once the dough is almost ready, add the toppings.
5.Top with the mashed tomato first, then the spinach, mushrooms, and cherry tomatoes, and finally with the pine nuts.
6.Put the pizza back in the oven for 10 more minutes, until the toppings are cooked.
Do you know why cauliflower has that strange smell when cooked? Because it contains some sulphur compounds that are released when boiled, giving them that characteristic odour. This is the main reason why children reject this vegetable.
