Ingredients:
- 75 g ground beef
- 1 onion, chopped
- 1 clove garlic, minced
- 100 g peeled wheat
- 1 cucumber, seeds take out, dice
- 1 red bell pepper, dice
- 8 cherry tomatoes, cut to four
- 1 red onion, chopped
- 1 avocado, sliced
- 2 cups water
- 2 tbsp olive oil
For the Dressing:
- ½ lime juice
- 1 tsp mustard
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
Step by Step:
1. Soak peeled wheat in warm water for at least 1 hour. Take wheat with water in a
medium saucepan add 300 ml water and bring it to a boil. Reduce the heat simmer
for 30 minutes with a lid. Drain it, set aside.
2. Heat the oil in a pan add garlic and onion, sauté for 3 minutes in high heat. Add
ground beef cook for 5 minutes, keep stirring all time. Set aside.
3. Combine all dressing ingredients in a large bowl. Add cucumber, tomatoes, bell
pepper, red onion, boiled wheat and sauté ground beef to the bowl. Toss it well.
4. To two serving bowl place mixture on it. Lastly place avocado slices on top, serve it.
