Ingredients
For base biscuit:
● 260 gr date
● 150 gr raw almonds
● 40 gr coconut powder
● 7 ml coconut oil
For cream;
● 380 gr raw cashew nuts
● 180 ml warm water, for cashew nuts
● 180 ml pure maple syrup
● 100 ml coconut oil
● 60 ml lemon juice
● 5 ml vanilla extract
For sauce;
● 60 gr blueberry
● 50 gr brown sugar
● one orange juice and zest
● 30 gr corn starch
● 150 ml water
Step by step
1. For Base Biscuit, soak dates in hot water for 15 minutes and drain.
2. Add raw almond, date, coconut powder and oil to a blender. Then add the mixture to
the cake mold you covered with baking paper and spread it on the base.
3. Finally, put the base you prepared in the freezer.
4. For Cream, soak raw cashews in hot water for 30 minutes and drain. Add raw
cashews, water, pure maple syrup, coconut oil, lemon juice, vanilla extract to a
blender. when the cream is ready, add the cream to the base that is in the freezer
and put it in the freezer again for 4 to 5 hours.
5. For Sauce, start cooking by adding blueberries and sugar to a pot. mix orange juice,
zest, and cornstarch with water.
6. Add the water-starch mixture to the simmering blueberries. When the consistency
starts to thicken, remove from the stove and allow the temperature to decrease.
7. Finally, take the no cheesecake out of the freezer and add the sauce you made on it
and put it in the freezer to rest for 1-2 hours again.
