Ingredients;
● 400 g purslane
● 1 mandarin, peel and sliced
● 80 g ricotta cheese
● 50 g crushed walnuts
For the dressing;
● 1 lemon juice
● 2 tbsp balsamic vinegar
● 1 tsp salt
Step by step
1. Wash purslane and mandarins, and let them dry.
2. Peel the mandarin shells and slice them into pieces.
3. In another bowl, mix dressing ingredients and take a side.
4. Share purslane and mandarins to two serving plates.
5. Sprinkle ricotta and crushed walnuts on top of the salad.
6. Drizzle dressing and serve it. Enjoy!
