Ingredients:
- 2 pieces (150 g) salmon fillets
- 100 g white quinoa
- 175 ml water
- 50 g broccoli, medium dice
- 50 g carrot, medium dice
- 50 g sweet potato, medium dice
- 50 g peas
- 2 L water
- 2 bay leaves
- 2 clove garlic, minced
- Fresh herbs
- 1 thumb size ginger
- 1 tbsp sea salt
- 2 lemon slices
For the Dressing:
- ½ lemon juice
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 clove garlic
- 1 tsp salt
- 1 tsp pepper
Step by Step:
1. Place bay leaves, garlic, ginger, sea salt and 2 L water. Cover the lid, bring it to a boil.
With cover lid boil for 5 minutes. Then reduce the heat and place steamer basket on
pot. Sprinkle salt and pepper both sides of fillet and places on steamer basket with
vegetables. Steamed everything for 15 minutes.
2. Combine quinoa and 175 ml water, 1 tsp salt and pepper in a pot. Bring it to a boil,
reduce heat and simmer with closed lid for 15 minutes. Take from heat and rest for
10 minutes. Fluff up with two forks.
3. Blend all dressing ingredient in blender until smooth texture. Set aside.
4. Took two serving bowls, place quinoa one side of the bowl, place steamed fillet on
top of quinoa, place vegetables on the other side. Drizzle dressing on top and serve
with lemon slice. Enjoy!
