Ingredients
- 2 mashed bananas + 1 banana to decorate the top
- 180g honey
- 150g unsweetened apple sauce
- 50g coconut oil
- 1 teaspoon vanilla
- 4 eggs
- 220ml almond milk
- 200g whole wheat flour
- 100g rolled oats
- 5g baking soda
- 5g baking powder
- 5g ground cinnamon
- 15g poppy seeds
- 30g coconut flakes
- 100g chopped walnuts
- Zest of an orange
Step by step
1. Preheat oven to 180ºC. Grease a 9-inch loaf pan with coconut oil.
2. In a large bowl, combine mashed banana, applesauce, honey, eggs, almond milk, coconut oil, orange zest and vanilla until well combined and creamy.
3. In a separate medium bowl, whisk together whole wheat flour, oats, baking powder, baking soda, salt, cinnamon, poppy seeds, coconut flakes and walnuts.
4. Add wet ingredients to dry ingredients and mix until just combined.
5. Pour into prepared loaf pan. Decorate with 2 slices of banana and sprinkle oats over top.
6. Bake for 60-70 minutes.
7. Remove from oven and place on wire rack to cool completely.
