Cold Chicken Salad

Cold Chicken Salad: It's light and refreshing

This is a great recipe for a summertime lunch or light dinner. Cold chicken salad is perfect for those hot days when you don't want to turn on the oven. This dish is also packed with healthy ingredients like chicken, grapes, and almonds, so you'll feel good about eating it. Plus, it's easy to make ahead of time and can be served chilled or at room temperature.

Ingredients: 

  • 2 chicken breasts

  • 500 ml water

  • 200 g spinach

  • 50 g watercress

  • 1 green apple, sliced

  • 2 red radishs, sliced

  • ½ cup goat cheese

  • ½ cup almond, sliced

  • 1 tbsp salt

  • 1 tbsp white pepper

For the dressing;

  • 2 tbsp olive oil

  • 1 tbsp apple vinegar

  • 1 tbsp mustard

  • 1 tsp honey

  • 1 tsp salt

Step by step

1. Place chicken breast in a pot and season with salt and pepper. Add 500 ml water, boil, low the heat, cover with a lid and simmer for 15 minutes. Take out from the pot and shred with two forks.

2. In an empty pan, toast almonds and set aside.

3. Mix all dressing ingredients in a bowl and add radish slices. 

4. Mix spinach, and watercress, and shred cold chicken in a bowl.

5. Separate spinach and watercress into two serving plates. Crumble goat cheese to the top—drizzle dressing and place radish to the salad. Sprinkle toasted almond and serve it. Enjoy!
